SURFS UP

If you like pina coladas and getting caught in the rain and the feel of the ocean and the taste of champagne,    then these jello shots are for you! Using coconut milk and coconut rum, we flavored up some Jello to make one of favorite summer cocktails into waves of awesomeness.   Surf ups bro.


What you need:
6 oz box of Berry Blue Jello
4 envelopes of Knox original Gelatine
Boiling water
1.5 cups of coconut milk
2 cups of coconut rum
muffin trays
4oz plastic souffle cups


Directions:
White layer: 
Mix 4 envelops of Knox Gelatine with 1.5cups of cold coconut milk for 1 minute. 
Add 2 cups of hot water slowing and stir until Gelatine completely dissolved. 
Add 1/2 cup of cold coconut rum and stir.
Spray Souffle cups with cooking spray
Pour white mix about 1/4 up cup, and place at at angle in muffin tray (we used a bit of paper towel to hold at a tilt in the cup).
Let set for 2 hours.

Blue Layer: (once white layer is firm)
Mix 1.5 cups of hot water and a  6oz packet of berry blue Jello. Mix well.
Add in 1.5 cups of cold coconut rum and stir well.
Add 1/2 cup of cold water and stir well.
Pour blue mixture over the white, leveling out flat in cup. 
Let set flat (not tilted) for 3-4 hours at least.  the longer the better.

Use a butter knife to loosen and take out of cups once set and ready to serve.
Add paper umbrella and your set for an instant vacay!

WATERMELON SALAD IN A WATERMELON

Ek! Its 4pm and a friend just invited you over for a last minute small dinner get together.  Beyond it starting in a few hours, its also Monday night and you have no desire to do anything but sip on a glass of chardonnay and catch up with the ladies. No worries, we've  got you covered. Quick, cute, cheap and delicious- The Watermelon Salad in a Watermelon!



The Salad
A head of romaine lettuce chopped
1 cup of chopped mint
Half of a watermelon cubed (or as close to square as possible) . Use the hollowed out half for the salad bowl.
4 oz of feta cheese
1/2 of a cucumber diced



The Dressing * from skinnytaste
2 1/2 tbsp balsamic vinegar
1 tsp water
1 tbsp chopped shallots
1/8th  tsp kosher salt
pinch fresh black pepper
2 tbsp extra virgin olive oil
- mix all ingredients slowing mixing in olive oil last

Pour dressing over salad a few minutes before eating. Enjoy!

SUMMER NOT BUMMER


Its officially summer!!! The calender marks it as June 21st,  but we say Memorial day is the true start and most people that own white denim would agree (although we never took ours out of rotation this year).  Now that the season of pool parties and barbecue filled weekends is here, we get to break out the popsicle molds and start experimenting with all these rad ideas we have been holding since the 60 degree winter...cough cough.  As harsh as it may be, people don't want popsicles at their Halloween, holiday or Super Bowl parties. They are summer thing and we like it that way.  Here are a handful of awesome popsicle recipes that include a few of our favorite ingredients; champagne, flowers,vanilla , avocado, rum, chocolate and lots of fruit!
